  • 1 can black beans, rinsed and drained
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup Can be substituted with agave syrup or honey
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips Ensure they are dairy-free if needed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8x8 inch baking pan with coconut oil or use parchment paper.
  3. In a food processor, blend the rinsed black beans, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt until smooth.
  4. Transfer the batter to a bowl and gently fold in the dark chocolate chips.
Baking
  1. Pour the brownie mixture into the prepared baking pan and spread evenly.
  2. Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the pan before slicing into squares.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months. Reheat in the oven for a few minutes for optimal texture.
