Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar Can substitute half for a sugar alternative.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
Add-ins
  • 1/2 cup sprinkles Use vibrant sprinkles to avoid melting.

Method
 

Baking Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
Mixing Ingredients
  1. In a large bowl, cream together the softened butter and white sugar until the mixture is light and fluffy, about 2-3 minutes.
  2. Beat in the egg, vanilla extract, and almond extract until perfectly blended.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix to keep the cookies tender.
  4. Gently fold in the sprinkles—you want them to stay vibrant, not melt away!
Baking Cookies
  1. Use a cookie scoop or tablespoon to drop rounded balls of dough onto an ungreased baking sheet, spacing them about 2 inches apart.
  2. Bake for 8-10 minutes, or until the edges are just starting to turn golden.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Reheat in the microwave for 10-15 seconds or in a preheated oven at 350°F for a few minutes.
