  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1 cup sugar You can use less if desired!
  • 1/3 cup vegetable oil
  • 1/2 cup vanilla yogurt Can be swapped with applesauce for a lighter option.
  • 1 box (3.4 oz) instant vanilla pudding mix Provides creaminess.
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup optional chocolate chips or nuts For extra flair!

Preparation
  1. Preheat your oven to 350°F (175°C), and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add sugar, vegetable oil, and yogurt to the bananas. Beat in eggs and vanilla extract until well blended.
  4. In another bowl, whisk together the flour, pudding mix, baking soda, and salt.
  5. Slowly fold the dry ingredients into the banana mixture until just combined. Be careful not to overmix—lumps are fine!
  6. If you're opting for chocolate chips or nuts, gently fold them in now.
  7. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice it up, and enjoy!

Notes

For a luxurious treat, serve with whipped cream or vanilla ice cream. Leftovers can be stored wrapped in plastic wrap or in an airtight container at room temperature for about 3 days and can be frozen for up to three months.
