- Preheat your oven to 350°F (175°C), and grease a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add sugar, vegetable oil, and yogurt to the bananas. Beat in eggs and vanilla extract until well blended.
- In another bowl, whisk together the flour, pudding mix, baking soda, and salt.
- Slowly fold the dry ingredients into the banana mixture until just combined. Be careful not to overmix—lumps are fine!
- If you're opting for chocolate chips or nuts, gently fold them in now.
- Pour the batter into the prepared loaf pan and bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice it up, and enjoy!
Notes
For a luxurious treat, serve with whipped cream or vanilla ice cream. Leftovers can be stored wrapped in plastic wrap or in an airtight container at room temperature for about 3 days and can be frozen for up to three months.
