  • 1 teaspoon baking powder

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter and optionally line the bottom with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  4. In a larger mixing bowl, cream the softened butter and sugar until fluffy and pale.
  5. Beat in the eggs one at a time, mixing until well combined, then add the vanilla extract and mix until smooth.
  6. Gradually add the dry ingredients, mixing until just combined—be careful not to overmix.
  7. Gently fold in the sliced plums until evenly distributed.
  8. Transfer the batter to the prepared cake pan, smoothing the top with a spatula.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a dairy-free option, use coconut oil or a dairy-free butter alternative in place of regular butter. Always keep an eye on the cake during the last 5 minutes of baking to avoid overcooking.
