Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter and optionally line the bottom with parchment paper.
- In a bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- In a larger mixing bowl, cream the softened butter and sugar until fluffy and pale.
- Beat in the eggs one at a time, mixing until well combined, then add the vanilla extract and mix until smooth.
- Gradually add the dry ingredients, mixing until just combined—be careful not to overmix.
- Gently fold in the sliced plums until evenly distributed.
- Transfer the batter to the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy with your loved ones!
Notes
For a dairy-free option, use coconut oil or a dairy-free butter alternative in place of regular butter. Always keep an eye on the cake during the last 5 minutes of baking to avoid overcooking. Store it in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week, and freeze for up to 3 months.
