Baking Preparation
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and vanilla bean paste until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
- On a floured surface, roll out a portion of the dough to 1/4 inch thick. Use a clover-shaped cookie cutter to cut out cookies.
- Place the cookies on an ungreased baking sheet, leaving space between each.
Baking
- Bake for 10-12 minutes, or until the edges are slightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For variations, substitute half of the vanilla extract with almond extract. Store in an airtight container for up to a week or freeze for up to three months.
