Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour Sifted
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon vanilla bean paste

Method
 

Baking Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and vanilla bean paste until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  6. On a floured surface, roll out a portion of the dough to 1/4 inch thick. Use a clover-shaped cookie cutter to cut out cookies.
  7. Place the cookies on an ungreased baking sheet, leaving space between each.
Baking
  1. Bake for 10-12 minutes, or until the edges are slightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For variations, substitute half of the vanilla extract with almond extract. Store in an airtight container for up to a week or freeze for up to three months.
