Ingredients

  • - 1 teaspoon vanilla extract
  • - Red or pink gel food coloring
  • - 1/4 cup Valentine’s Day-themed sprinkles

Instructions
 

  • **Prepare the dry ingredients**
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • **Cream the butter and sugar**
  • In a large mixing bowl, use an electric mixer to beat the softened butter and sugar together until light and fluffy, about 2–3 minutes.
  • **Add the wet ingredients**
  • Mix in the egg and vanilla extract until fully incorporated.
  • **Combine wet and dry ingredients**
  • Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • **Divide and color the dough**
  • Divide the dough into two equal portions. Leave one portion plain. Add a few drops of red or pink gel food coloring to the other portion and knead until the color is evenly distributed.
  • **Add sprinkles to the plain dough**
  • Fold the Valentine’s Day sprinkles into the plain dough, distributing them evenly.
  • **Shape the dough**
  • Roll each portion of dough into a log about 2 inches in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
  • **Preheat the oven**
  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • **Slice the cookies**
  • Remove the dough logs from the refrigerator and slice into 1/4-inch thick rounds. Arrange the slices on the prepared baking sheets, spacing them about 2 inches apart.
  • **Bake**
  • Bake the cookies for 10–12 minutes, or until the edges are just set. Avoid browning the cookies to maintain their vibrant color.
  • **Cool and serve**
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
