**Prepare the dry ingredients**
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
**Cream the butter and sugar**
In a large mixing bowl, use an electric mixer to beat the softened butter and sugar together until light and fluffy, about 2–3 minutes.
**Add the wet ingredients**
Mix in the egg and vanilla extract until fully incorporated.
**Combine wet and dry ingredients**
Gradually add the dry ingredients to the butter mixture, mixing just until combined.
**Divide and color the dough**
Divide the dough into two equal portions. Leave one portion plain. Add a few drops of red or pink gel food coloring to the other portion and knead until the color is evenly distributed.
**Add sprinkles to the plain dough**
Fold the Valentine’s Day sprinkles into the plain dough, distributing them evenly.
**Shape the dough**
Roll each portion of dough into a log about 2 inches in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
**Preheat the oven**
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
**Slice the cookies**
Remove the dough logs from the refrigerator and slice into 1/4-inch thick rounds. Arrange the slices on the prepared baking sheets, spacing them about 2 inches apart.
**Bake**
Bake the cookies for 10–12 minutes, or until the edges are just set. Avoid browning the cookies to maintain their vibrant color.
**Cool and serve**
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
