  • 1 loaf challah or brioche bread, cubed Day-old or stale bread works best for texture.
  • 2 cups fresh blueberries (or frozen, thawed) Feel free to substitute with other fruits like strawberries or raspberries.
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Place the cubed bread into the dish and scatter the blueberries evenly over the top.
Custard Mixture
  1. In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, and a pinch of salt until well combined.
Combine and Soak
  1. Pour the custard mixture over the bread and blueberries, ensuring everything is perfectly soaked.
  2. For the best flavor, let it sit for about 30 minutes, or preferably overnight in the refrigerator.
Baking
  1. Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden and the custard has set.
Serving
  1. Once baked, let it cool slightly before slicing. Serve warm with additional maple syrup and whipped cream, if desired.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in the oven at 350°F (175°C). Freezing portions is also possible for up to a month.
