Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, melted butter, brown sugar, granulated sugar, and vanilla extract and whisk them together until smooth.
- Incorporate the eggs one at a time, ensuring they are fully mixed in before adding the next.
- In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the pumpkin mixture, alternating with the milk until well combined.
- Gently fold in the chopped pecans, ensuring an even distribution throughout the batter.
Baking
- Pour the batter into a greased baking dish (9x13 inches). Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Serving
- Let it cool for at least 10 minutes before serving. Enjoy warm or at room temperature with your choice of topping.
Notes
For storage, cover tightly and refrigerate for up to four days. Freeze individual slices for up to three months. To reheat, microwave or bake in a preheated oven.
