Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9x5-inch loaf pans to prevent sticking.
- In a large bowl, mix the pumpkin puree, eggs, vegetable oil, sugar, and vanilla extract until well blended.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, pumpkin pie spice, and ground cinnamon.
- Gradually add the dry mixture to the wet ingredients. Stir gently until just combined—do not overmix!
- Divide the batter evenly between the two prepared loaf pans.
Baking
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
- Let the bread cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Consider using almond flour for a gluten-free option or coconut oil for added flavor. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat at 300°F for about 10-15 minutes.
