Ingredients
  

Dry Ingredients
  • 2 cups rolled oats Use gluten-free oats if needed.
  • 1 cup all-purpose flour Can substitute with almond flour for a nutty flavor.
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup pitted plums, chopped Use fresh, ripe plums for best flavor.
  • 1/4 cup honey or maple syrup Optional ingredient.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, mix the rolled oats, all-purpose flour, brown sugar, granulated sugar, salt, and baking powder until well combined.
  3. Make a well in the center of the dry mixture, pour in the melted butter, honey, and vanilla extract, and mix until fully combined.
  4. Gently fold in the chopped plums until evenly distributed.
  5. Pour the mixture into the prepared baking pan and press down firmly to create an even layer.
Baking
  1. Bake in the preheated oven for approximately 30 minutes or until the edges turn golden brown and the top is set.
  2. Allow the bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper.
  3. Cool completely on a wire rack and then slice into squares or rectangles.
Serving
  1. Enjoy the bars warm or at room temperature as a breakfast or snack.

Notes

Store in an airtight container for up to a week at room temperature. Refrigerate for up to 2 weeks or freeze for up to 3 months. Thaw at room temperature or microwave until warm prior to serving.
