Ingredients
  

For the bread
  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/3 cup melted butter Use room temperature for a smoother batter.
  • 1 cup sugar
  • 1 piece egg, beaten Room temperature preferred.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Avoid over-mixing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth using a fork.
  3. Mix in the melted butter until well combined.
  4. Stir in the sugar, beaten egg, and vanilla extract, mixing thoroughly.
  5. Sprinkle the baking soda and salt over the mixture and gently stir.
  6. Add the flour last and stir until just combined to avoid over-mixing.
  7. Pour the batter into a greased 4x8 inch loaf pan and smooth the top.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with whipped cream, ice cream, or your favorite beverage. Store in an airtight container for up to 3 days or freeze slices for longer storage.
