  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 0.75 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish with nonstick spray or butter.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually mix in the flour mixture into the wet ingredients, ensuring no flour pockets remain.
  6. Gently fold in the chocolate chips, mini marshmallows, and graham cracker crumbs.
  7. Spoon the cookie dough mixture into the prepared pie dish, spreading it evenly.
Baking
  1. Bake the pie in the oven for 20-25 minutes or until the edges are golden brown and the center is set.
  2. If desired, add extra marshmallows on top during the last 5 minutes of baking.
  3. Once baked, let the pie cool for at least 10 minutes before slicing.

For ingredients substitutions, consider using whole grain flour or coconut sugar for a healthier option. Store in the refrigerator for up to 5 days or freeze for up to 2 months.
