  • 2 cups cucumber, sliced
  • 2 cups carrot, grated

Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Wash the cucumbers and carrots thoroughly. Slice the cucumbers into thin rounds.
  2. Grate the carrots until you have about 2 cups.
  3. Thinly slice the red onion.
  4. Finely chop the fresh parsley.
Assembly
  1. In a large mixing bowl, combine the sliced cucumbers, grated carrots, sliced onions, and parsley.
  2. In a small bowl, whisk together the olive oil and lemon juice, then pour over the salad.
  3. Season with salt and pepper to taste.
  4. Gently toss everything together until nicely coated.
  5. Serve immediately or let it chill in the refrigerator for a while to meld flavors.

Notes

For the best flavor, prepare this salad at least an hour before serving. Store in an airtight container in the refrigerator for up to 3 days. Avoid reheating as it is best served cold.
