Ingredients
  

Batter Ingredients
  • 3 pieces ripe bananas, mashed The riper the bananas, the sweeter the bread.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda Leavening agent.
  • pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
Topping Ingredients
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts Optional; substitute with chocolate chips if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the melted butter and mashed bananas. Mix well, then add in the beaten egg and vanilla extract. Mix until smooth.
  3. In another bowl, combine flour, baking soda, salt, and sugar. Gradually add this dry mixture to the wet ingredients, stirring gently until just incorporated.
  4. In a separate small bowl, mix the brown sugar, cinnamon, and optional walnuts. Set aside.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the topping mixture on top. Add the remaining batter and finish with the rest of the topping, making sure it's evenly distributed.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze in slices for up to 3 months. Reheat slices in the microwave for 15-20 seconds or in an oven at 350°F for about 10 minutes.
