Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract. Ensure everything is well combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently just until incorporated to avoid overmixing.
- Gently fold in the chopped apples and walnuts or pecans, if using.
- Pour the batter into a greased 9x5 inch loaf pan, smoothing the top with a spatula.
Baking
- Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a dairy-free version, substitute unsalted butter with coconut oil or a plant-based butter. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
