Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and granulated sugar until well combined.
- In another bowl, beat the eggs and mix in the vegetable oil, unsweetened applesauce, and vanilla extract.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Fold in the chopped apples lightly.
- Grease a 9×5-inch loaf pan.
- Pour the batter into the prepared loaf pan. Mix brown sugar and cinnamon in a small bowl, then sprinkle evenly over the batter.
Baking
- Bake for 50-55 minutes or until a toothpick inserted comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for 3-4 days. Freeze slices for longer storage. Reheat slices in the microwave for 15-20 seconds or in a toaster.
