Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
Wet Ingredients
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
Main Ingredients
  • 2 cups chopped apples preferably Granny Smith for tartness
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and granulated sugar until well combined.
  3. In another bowl, beat the eggs and mix in the vegetable oil, unsweetened applesauce, and vanilla extract.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  5. Fold in the chopped apples lightly.
  6. Grease a 9×5-inch loaf pan.
  7. Pour the batter into the prepared loaf pan. Mix brown sugar and cinnamon in a small bowl, then sprinkle evenly over the batter.
Baking
  1. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for 3-4 days. Freeze slices for longer storage. Reheat slices in the microwave for 15-20 seconds or in a toaster.
