Preparation
- Preheat your oven to 350°F (175°C). Grease or line a baking dish with parchment paper for easy removal.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
- Beat in the eggs one at a time, fully incorporating each before adding the next one. Add the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Gently fold in the chocolate chips and chopped cherries.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 15 minutes before lifting them out. Once completely cooled, slice into squares or rectangles.
Notes
For a nutty flavor, add chopped pecans or walnuts (Halal-compliant). Allow bars to cool completely before cutting to prevent crumbling. Store in an airtight container; refrigerate for up to a week or freeze for three months. Reheat in the microwave or at 350°F for a gooey texture.
