  • 1 cup brown sugar
  • 1/2 cup granulated sugar

  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Substitute with your favorite variety as long as it's Halal.
  • 1 cup pitted cherries, chopped Frozen cherries can be used if thawed and drained.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a baking dish with parchment paper for easy removal.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
  3. Beat in the eggs one at a time, fully incorporating each before adding the next one. Add the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Gently fold in the chocolate chips and chopped cherries.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool in the pan for about 15 minutes before lifting them out. Once completely cooled, slice into squares or rectangles.

Notes

For a nutty flavor, add chopped pecans or walnuts (Halal-compliant). Allow bars to cool completely before cutting to prevent crumbling. Store in an airtight container; refrigerate for up to a week or freeze for three months. Reheat in the microwave or at 350°F for a gooey texture.
