Ingredients
  

For the Nachos
  • 1 bag Tortilla Chips (about 10-12 oz)
  • 2 cups Shredded Cheese (cheddar or your favorite blend) Use a blend that melts well.
  • 1 can Black Beans (15 oz), drained and rinsed
  • 1 cup Diced Tomatoes (fresh or canned)
  • 1-2 Jalapeños, sliced Add more for spiciness.
For Toppings
  • Sour Cream For topping.
  • Guacamole For topping.
  • Salsa For topping.

Method
 

Preparation
  1. Preheat your oven (or grill) to 350°F (175°C).
  2. On a large baking sheet (or a cast-iron skillet), spread the tortilla chips evenly.
Assembly
  1. Sprinkle half of the shredded cheese over the chips, then add a layer of black beans, diced tomatoes, and sliced jalapeños. Finish with the remaining cheese on top.
Cooking
  1. Place the baking sheet in the preheated oven or on the grill. Bake for 10-12 minutes, or until the cheese is bubbly and golden brown. Keep an eye on them to avoid burning.
  2. Once out of the oven, top your nachos with dollops of sour cream, guacamole, and salsa for extra flavor.

Notes

For a vegan version, use vegan cheese and skip the sour cream. Consider adding corn for extra sweetness and avoid overloading with toppings to keep chips crispy.
