Ingredients
  

For the Apple Filling
  • 6-8 pieces apples (Granny Smith, Honeycrisp, or your choice) Mix for ideal tart and sweet balance.
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon butter Cut into small pieces to dot on filling.
For the Crust
  • 1 package refrigerated pie crusts (or homemade crust)
  • 1 egg optional for egg wash

Method
 

Preparation
  1. Peel, core, and slice your apples into 1/4-inch slices.
  2. In a large bowl, combine sliced apples with sugar, cinnamon, nutmeg, lemon juice, flour, and salt. Toss until coated.
  3. Preheat your oven to 425°F (220°C).
  4. Place one pie crust into a 9-inch pie dish.
  5. Spoon the apple mixture into the crust, packing it down slightly. Dot filling with pieces of butter.
  6. Roll out the second pie crust, place it over the filling, crimp the edges, and cut slits in the top for steam to escape.
  7. If using an egg wash, beat the egg and brush it over the crust.
Baking
  1. Bake the pie in the preheated oven for about 45 minutes or until apples are tender and crust is golden brown.
  2. Allow to cool for at least 30 minutes before serving.

Notes

Store leftovers covered in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the microwave or oven to maintain crust crispness.
