Ingredients
  

Cake Base
  • 2 cups all-purpose flour Use gluten-free flour if needed.
  • 1 cup granulated sugar Can substitute with coconut sugar for deeper flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter Must be softened, not melted.
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples Choose your favorite variety, tart apples like Granny Smith are great.
Crumb Topping
  • 1 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon ground nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and coat a 9×13-inch baking pan with non-stick cooking spray or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, combine the softened butter and eggs. Mix well, then add in the vanilla extract.
  4. Blend the butter mixture into the dry ingredients until well combined.
  5. Fold in the diced apples gently.
  6. Pour the batter into your prepared baking pan and spread it out evenly.
Crumb Topping
  1. In a separate bowl, mix together the brown sugar, rolled oats, and ground nutmeg.
  2. Sprinkle the oat mixture over the batter in the pan.
Baking
  1. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For freezing, wrap tightly and it lasts for up to 3 months. Thaw at room temperature or reheat at 350°F (175°C) for 10-15 minutes.
