  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 1 cup almond milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon almond extract
Add-ins
  • 1 cup chopped cherries (fresh or frozen)
  • 1/2 cup sliced almonds

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal later.
  2. In a large bowl, whisk together the all-purpose flour, sugar, salt, baking powder, and baking soda until well combined.
  3. In another bowl, mix the almond milk, melted butter, eggs, and almond extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix! Gently fold in the chopped cherries and sliced almonds.
  5. Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

For a dairy-free option, substitute butter with coconut oil. Ensure not to overmix the batter to keep the bread fluffy. If using frozen cherries, thaw and drain them well to prevent excess moisture.
