Ingredients
  

Marinated Chicken
  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
Tzatziki Sauce
  • 1 cup plain Greek yogurt can be low-fat or full-fat
  • 1 medium cucumber, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
Salad Components
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup fresh cilantro (optional for garnish)

Method
 

Marinate the Chicken
  1. In a bowl, combine the olive oil, lemon juice, salt, and pepper. Add in the chicken breasts, ensuring they are well-coated. Allow them to marinate for at least 15 minutes.
Cook the Chicken
  1. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Once done, remove the chicken and let it rest for 5 minutes before slicing it into bite-sized pieces.
Prepare the Tzatziki Sauce
  1. In a mixing bowl, combine the Greek yogurt, finely diced cucumber, minced garlic, and chopped dill. Stir until well blended. Season with a pinch of salt and more lemon juice if desired.
Assemble the Salad
  1. In a large serving bowl, mix the sliced chicken, cherry tomatoes, red onion, and tzatziki sauce. Toss gently to combine everything.
Serve
  1. Garnish with fresh cilantro if desired. Enjoy immediately or chill it for an hour for a cold, refreshing salad that's perfect on a warm day!

Notes

Feel free to substitute chicken for grilled shrimp or chickpeas for a vegetarian option. Store leftovers in an airtight container in the refrigerator for up to three days. For freezing, keep the tzatziki sauce separate from the salad components.
