Ingredients
  

For the Chicken Marinade
  • 2 pieces chicken breasts (skinless and boneless)
  • 1 cup plain Greek yogurt
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill (chopped)
  • Salt and pepper to taste
For the Salad
  • 1 medium cucumber (peeled and diced)
  • Cherry tomatoes optional for garnish

Method
 

Preparation
  1. In a bowl, combine the Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper. Toss the chicken breasts in the marinade, ensuring they’re well coated. Let it marinate for about 15 minutes.
  2. While the chicken is marinating, prepare the tzatziki sauce by mixing the remaining Greek yogurt with the diced cucumber, garlic, and more dill. Add salt and pepper to taste.
Cooking
  1. Heat a grill or skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  2. Use a meat thermometer to ensure the chicken reaches 165°F (75°C).
Assembly
  1. Slice the cooked chicken into strips. On a plate, layer the lettuce leaves, then top with sliced chicken and a generous dollop of tzatziki sauce.
  2. Optionally, add cherry tomatoes for a pop of color!

Notes

Don’t rush the marination; allowing the chicken to marinate for at least 15 minutes will enhance the flavor. Feel free to experiment by adding ingredients like roasted red peppers or olives for a Mediterranean twist. Avoid overcooking the chicken to keep it juicy.
