Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash and dry your sweet potatoes, then use a fork to poke a few holes in each one for steam to escape.
  2. Bake the sweet potatoes directly on the oven rack for about 45-50 minutes, or until they’re tender and can be easily pierced with a fork.
Cooling and Mixing
  1. Once baked, let the sweet potatoes cool for about 10-15 minutes. Carefully slice each potato in half lengthwise.
  2. Using a spoon, carefully scoop out the flesh into a mixing bowl, leaving a small border around the edges to maintain structure.
  3. Add the butter, sour cream, half of the shredded cheese, salt, and pepper to the bowl. Mash everything together until creamy and smooth.
Baking
  1. Spoon the mixture back into the potato skins, mounding it slightly. Top each with the remaining cheese.
  2. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until the tops are golden and bubbly.
Serving
  1. Remove from the oven, sprinkle with chopped chives or green onions for a fresh finish, and serve warm.

Notes

For variations, consider adding roasted vegetables to the filling or substituting sour cream with Greek yogurt. Ensure to monitor baking times to avoid dryness. Store leftovers in an airtight container for 3-4 days or freeze for up to a month. Reheat in the oven at 350°F (175°C) for 20-25 minutes.
