  • 1 lb Halal Italian sausage (or chicken sausage)
  • 4 medium-sized potatoes, peeled and diced
  • 2 cups fresh kale, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth (ensure it’s Halal)
  • 1 cup heavy cream (or coconut cream for a dairy-free alternative)
  • 1 tsp red pepper flakes adjust according to spice preference
  • Salt and pepper to taste

Preparation
  1. In a large pot over medium heat, add the Halal Italian sausage. Cook until browned, breaking it apart with a wooden spoon for about 5-7 minutes.
  2. Stir in the diced onions and garlic. Cook until the onions become translucent, usually 3-4 minutes.
  3. Add the diced potatoes, seasoning with salt, pepper, and red pepper flakes. Stir everything until the potatoes are well combined.
  4. Add the chicken broth into the pot, bringing it to a gentle boil. Lower the heat and let it simmer for about 10 minutes, or until the potatoes are fork-tender.
  5. Stir in the chopped kale and heavy cream. Let it cook for an additional 5 minutes until everything is heated through and the kale wilts.
  6. Taste and adjust seasonings if necessary. Serve hot, garnished with your favorite toppings!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze in individual portions for up to 3 months. Thaw in the fridge overnight and reheat on the stove over low heat.
