  • 4 pieces chicken thighs Bone-in, skin-on for extra flavor
  • 1 can (15 oz) white beans Drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 4 cloves garlic, minced
  • 1 cup chopped kale
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For searing (optional)

Preparation
  1. Start by chopping your carrots, onions, and kale. Mince the garlic and set everything aside.
  2. While not required, sear the chicken thighs in a pan with a tablespoon of olive oil until golden brown to enhance the flavor.
  3. In your slow cooker, place the chicken thighs at the bottom. Layer the chopped onions, carrots, and kale on top.
  4. Pour in the drained white beans, diced tomatoes, chicken broth, and minced garlic. Sprinkle Italian seasoning, salt, and pepper. Stir gently to combine.
  5. Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours.
  6. When ready, check the seasoning and adjust if necessary. Ladle it hot into bowls.
  7. Optionally, top with additional fresh herbs or a squeeze of lemon for extra brightness.

Notes

Feel free to substitute chicken for turkey or lean beef. For shorter cooking times, use high heat for 3-4 hours.
