- Start by chopping your carrots, onions, and kale. Mince the garlic and set everything aside.
- While not required, sear the chicken thighs in a pan with a tablespoon of olive oil until golden brown to enhance the flavor.
- In your slow cooker, place the chicken thighs at the bottom. Layer the chopped onions, carrots, and kale on top.
- Pour in the drained white beans, diced tomatoes, chicken broth, and minced garlic. Sprinkle Italian seasoning, salt, and pepper. Stir gently to combine.
- Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours.
- When ready, check the seasoning and adjust if necessary. Ladle it hot into bowls.
- Optionally, top with additional fresh herbs or a squeeze of lemon for extra brightness.
Notes
Feel free to substitute chicken for turkey or lean beef. For shorter cooking times, use high heat for 3-4 hours.
