  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 teaspoon ground turmeric
  • 1 cup shredded cooked chicken
  • Salt and pepper to taste
  • Fresh cilantro for garnish

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  3. Sprinkle in the ground turmeric, stirring well to combine it with the onions, garlic, and ginger. Let the spices bloom for about 30 seconds.
  4. Slowly add the 2 cups of chicken broth, bringing the mixture to a simmer.
  5. Add in the cup of shredded cooked chicken and season with salt and pepper to taste.
  6. Let the soup simmer on low heat for about 10 minutes. Ladle into bowls and garnish with fresh cilantro before serving. Enjoy!
