Ingredients for the soup
  • 1 lb chicken (cut into pieces)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1 tsp turmeric powder
  • 4 cups chicken broth
  • 2 carrots (sliced)
  • 2 stalks celery (sliced)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Toss in the minced garlic and grated ginger, cooking until fragrant.
  3. Add the chicken pieces to the pot. Cook until they are browned on all sides, approximately 7-10 minutes.
  4. Sprinkle in the turmeric powder, mixing well to coat the chicken.
  5. Pour in the chicken broth, and add the sliced carrots and celery. Raise the heat to bring the mixture to a gentle boil.
  6. Reduce the heat to low and let the soup simmer for 25-30 minutes.
  7. Season with salt and pepper to taste, then ladle into bowls.
  8. Top with fresh cilantro just before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Gently reheat with a splash of water or broth if needed.
