- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Toss in the minced garlic and grated ginger, cooking until fragrant.
- Add the chicken pieces to the pot. Cook until they are browned on all sides, approximately 7-10 minutes.
- Sprinkle in the turmeric powder, mixing well to coat the chicken.
- Pour in the chicken broth, and add the sliced carrots and celery. Raise the heat to bring the mixture to a gentle boil.
- Reduce the heat to low and let the soup simmer for 25-30 minutes.
- Season with salt and pepper to taste, then ladle into bowls.
- Top with fresh cilantro just before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Gently reheat with a splash of water or broth if needed.
