Ingredients
  

For the salad
  • 4 cups romaine lettuce, chopped washed thoroughly
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed canned preferred
  • 1 cup corn canned or frozen
  • 1 avocado diced
  • 1 cup shredded cheddar cheese
  • Tortilla chips for serving
  • Dressing (sour cream, salsa, or your choice) as preferred
For the turkey filling
  • 1 lb ground turkey for the base filling
  • 1 packet taco seasoning adjust according to taste

Method
 

Cooking the Turkey
  1. In a large skillet, over medium heat, add the ground turkey. Cook for about 7-10 minutes, breaking it apart with a wooden spoon until browned and crumbly.
  2. Once the turkey is cooked through, add the taco seasoning as per the packet instructions. You might require a little water to help blend the spices. Stir well and let it simmer for about 5 minutes until fragrant.
Preparing and Assembling the Salad
  1. While the turkey is cooking, chop the romaine lettuce and wash it thoroughly. Place it in a large salad bowl or individual serving bowls.
  2. Layer the black beans, corn, cherry tomatoes, cheese, and diced avocado on top of the lettuce.
  3. Once the turkey has absorbed all the flavors, scoop it into the salad bowls over the toppings.
  4. Serve immediately with tortilla chips on the side and a drizzle of your preferred dressing!

Notes

Substitutions: You can easily swap ground turkey for ground chicken, beef, or even plant-based alternatives for a different spin while keeping it halal! Timing: Cook your turkey on medium heat to avoid burning. Always drain excess fat to keep the dish light and healthy. Avoiding Mistakes: Remember not to overcook the turkey; it should be cooked just until it’s no longer pink for a juicy flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
