Preparation
- Start by washing the fresh spinach, tomato, and cucumber. Slice the tomato and cucumber thinly, and slice the avocado into crescent-shaped pieces.
- Take one tortilla and evenly spread a layer of hummus (or your favorite spread) on the entire surface.
- On one side of the tortilla, layer about 2 ounces of sliced turkey, a handful of fresh spinach, tomato slices, cucumber slices, and several slices of avocado. Season with a pinch of salt and pepper.
- Start rolling the tortilla tightly from the side with all the fillings. Tuck in the ingredients to prevent them from spilling out. Roll until you reach the end, and use a little hummus to seal the edge.
- Once rolled, use a sharp knife to cut the wrap in half diagonally. Serve immediately or secure wraps with toothpicks for a picnic or casual gathering.
Notes
Substitutions include using grilled chicken or roasted vegetables. Prepare wraps just before serving to keep the avocado fresh. Avoid overstuffing to prevent messiness. Store leftovers in an airtight container in the fridge for up to 2 days, and eat cold or warm slightly.
