  • 1 cup coconut milk (or any milk of your choice)

  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a medium bowl, mix the rolled oats, shredded coconut, and a pinch of salt.
  2. Slowly pour in the coconut milk and stir to combine. Add the vanilla extract and honey or maple syrup if you prefer sweetness.
  3. Gently fold in the diced mango, ensuring it’s evenly distributed throughout the mixture.
  4. Pour the mixture into serving jars or bowls, seal them, and place them in the refrigerator. Allow them to sit overnight (or at least 4-6 hours) for the oats to soak up the liquid.
  5. The next morning, stir the oats, add extra diced mango, and your favorite toppings (like more coconut or nuts) before serving.

Notes

Best stored in a sealed container in the refrigerator for up to 4-5 days. Can be reheated in the microwave for 20-30 seconds.
