- In a medium bowl, mix the rolled oats, shredded coconut, and a pinch of salt.
- Slowly pour in the coconut milk and stir to combine. Add the vanilla extract and honey or maple syrup if you prefer sweetness.
- Gently fold in the diced mango, ensuring it’s evenly distributed throughout the mixture.
- Pour the mixture into serving jars or bowls, seal them, and place them in the refrigerator. Allow them to sit overnight (or at least 4-6 hours) for the oats to soak up the liquid.
- The next morning, stir the oats, add extra diced mango, and your favorite toppings (like more coconut or nuts) before serving.
Notes
Best stored in a sealed container in the refrigerator for up to 4-5 days. Can be reheated in the microwave for 20-30 seconds.
