Ingredients
  

For the marinade
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
For the kabobs
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 piece bell pepper (any color), cut into bite-sized pieces
  • 1 piece red onion, cut into wedges

Method
 

Marinating the Chicken
  1. In a mixing bowl, combine soy sauce, honey, vegetable oil, garlic powder, and ground ginger. Add the chicken pieces and mix until well-coated. Cover the bowl and marinate in the refrigerator for at least 20 minutes.
Preparing the Kabobs
  1. After marinating, take the skewers and thread the chicken, pineapple chunks, bell pepper, and onion alternately until the skewers are loaded.
Grilling the Kabobs
  1. Preheat your grill over medium heat. Once hot, place the skewers on the grill. Cook for around 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
Serving
  1. Remove kabobs from the grill and let them rest for a few minutes. Serve with your favorite dipping sauce or a sprinkle of fresh herbs for extra flavor.

Notes

For sides, consider pairing with a light cucumber salad or coleslaw. A tropical smoothie makes a great beverage option.
