  • 1 teaspoon lemon zest Freshly grated for best flavor.
  • 1 cup all-purpose flour For the cake base.
  • 1 teaspoon baking powder Leavening agent.
  • 1/4 teaspoon salt Enhances the flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together 1/4 cup softened butter and 1 cup sugar until light and fluffy.
  3. Beat in the 2 eggs, one at a time, ensuring they're fully incorporated before adding the next.
  4. Gradually add 1 cup of milk, 1/4 cup lemon juice, and 1 teaspoon lemon zest, mixing until well combined.
  5. In a separate bowl, sift together 1 cup flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  6. Fold the dry ingredients into the wet mixture gently to avoid overmixing.
  7. Pour the batter into a greased baking dish and bake for about 40-45 minutes, or until set and slightly golden.
  8. Allow the dessert to cool for a few minutes before serving.
  9. Optionally, sprinkle powdered sugar on top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Can be frozen in slices and reheated in the microwave.
