Ingredients

  • 4 cups sponge cake, crumbled Store-bought or homemade
  • 1 cup fruit juice Such as orange juice or apple juice
  • 2 cups vanilla custard Prepared or homemade
  • 2 cups whipped cream Make fresh or use store-bought
  • 2 cups mixed berries Such as strawberries, blueberries, raspberries, washed and trimmed
  • to taste almonds or chocolate shavings Optional for garnishing

Preparation
  1. Prepare the Sponge Cake: If using a store-bought sponge cake, crumble it into bite-sized pieces. If preferred, make a fresh vanilla sponge cake.
  2. Layer the Ingredients: In a large glass bowl or individual dessert cups, layer the crumbled sponge cake and drizzle some fruit juice over the layers.
  3. Add the Custard: Spoon a layer of vanilla custard over the sponge cake evenly.
  4. Whipped Cream Time: Add a generous layer of whipped cream on top.
  5. Berries Galore: Scatter mixed berries over the whipped cream.
  6. Repeat the Layers: Continue layering until ingredients are used up, finishing with a layer of whipped cream.
  7. Garnish: Sprinkle almonds or chocolate shavings on top.
  8. Chill Time: Refrigerate for at least 4 hours or overnight to meld flavors.
  9. Serve: Scoop out servings and enjoy!

Notes

To avoid sogginess, drizzle fruit juice just before serving. Ensure chilling time is not skipped for best texture. Store leftovers in an airtight container and consume within 2-3 days.
