Preparation
- Preheat your oven to 375°F (190°C).
- Lightly grease a round baking dish with cooking oil or butter to prevent sticking.
- Place 4 tortillas at the bottom of your baking dish, slightly overlapping to cover the base completely.
- In a bowl, whisk together the eggs and milk until combined. Season with salt and pepper.
- Fold in your chosen diced vegetables and about half of the shredded cheese into the egg mixture.
- Gently pour the egg mixture over the layered tortillas in the baking dish.
- Layer the remaining tortillas on top, followed by the remaining cheese.
Baking
- Place the dish in the preheated oven and bake for 25-30 minutes, or until golden brown and the center is set.
- Let it cool for a few minutes before slicing and serving with toppings of your choice.
Notes
You can customize your Tortilla Quiche with fresh herbs, spicy jalapeños, or a dollop of creamy yogurt. If you prefer, you can swap in any veggies you have on hand like zucchini or mushrooms—just make sure they are halal-friendly! Keep an eye on the baking time and cover with aluminum foil if the edges brown too quickly.
