  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red bell pepper diced
  • ½ cup black olives, sliced
  • ¼ cup red onion, thinly sliced
  • 1 cup fresh basil leaves
  • ½ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping (optional)

Preparation
  1. In a large pot of salted boiling water, cook the tortellini according to the package instructions. Fresh tortellini typically takes around 3-4 minutes, while frozen may take a bit longer. Drain and let it cool.
  2. While waiting for the pasta, dice the cucumber, red bell pepper, and red onion. Halve the cherry tomatoes and slice the olives.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
  4. In a large mixing bowl, combine the cooled tortellini with the diced veggies, basil leaves, and the dressing. Toss it gently until everything is well coated.
  5. Top with grated Parmesan if desired, and serve immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.

Notes
