  • 2 medium zucchinis, sliced
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Grated parmesan cheese (optional)

  1. Begin by boiling a large pot of salted water. Add your pasta of choice and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Next, toss in the sliced zucchini and cook for 3-4 minutes until tender.
  4. Stir in the halved cherry tomatoes, and cook for an additional 5 minutes until the tomatoes start to soften.
  5. Add the cooked pasta to the vegetable mixture in the skillet. Pour in the reserved pasta water to bring everything together.
  6. Gently agitate the skillet to combine and heat through.
  7. Season with salt and pepper to taste. Remove from heat and garnish with fresh basil and grated parmesan cheese if desired. Enjoy your delightful Tomato Zucchini Pasta!
