Ingredients
  

For the Tomato Confit
  • 4 large large ripe tomatoes, sliced
  • 1/2 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh herbs (thyme or rosemary) works wonderfully!
  • Salt and pepper to taste
For the Baked Brie
  • 1 wheel brie cheese (around 250 grams)
  • Fresh baguette (for serving)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice your tomatoes thickly and place them in a baking dish.
  3. In a small bowl, mix the minced garlic, olive oil, salt, pepper, and fresh herbs. Pour this mixture over the tomatoes.
Baking
  1. Bake the tomatoes for about 20-25 minutes, or until they are tender and bubbling.
  2. After the tomatoes are roasted, place the wheel of brie in the center and return it to the oven for 10-15 minutes, until the brie is soft and gooey.
  3. Let it cool for a minute, then serve warm with slices of fresh baguette.

Notes

Feel free to substitute different herbs or add spices like red pepper flakes. Store leftovers in an airtight container in the fridge for up to 3 days.
