Ingredients
  

For the Pasta
  • 8 oz spaghetti or your favorite pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, packed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Grated Parmesan cheese (optional for topping)
For the Chicken
  • 2 pieces chicken breasts
  • 2 tablespoons balsamic vinegar

Method
 

Cooking the Pasta
  1. Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing the Chicken
  1. While the pasta cooks, season the chicken breasts with olive oil, garlic powder, salt, and pepper. Preheat your grill or grill pan over medium-high heat.
Grilling the Chicken
  1. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once done, remove from the grill and let it rest for a few minutes.
Making the Balsamic Glaze
  1. In a small bowl, mix balsamic vinegar with a tablespoon of olive oil. Brush the mixture over the grilled chicken to add flavor.
Tossing the Pasta
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, and fresh basil. Drizzle with remaining olive oil and toss gently to combine.
Serving
  1. Slice the grilled chicken and serve it atop the pasta. Finish off with a sprinkle of grated Parmesan cheese if desired.

Notes

For best results, use fresh basil and avoid overcooking the pasta. Store leftovers in an airtight container in the refrigerator for up to 3 days.
