  • 2 cups fresh diced tomatoes Use vine-ripened tomatoes for best flavor.
  • 1/4 cup fresh basil leaves, chopped Feel free to substitute with oregano or thyme.
  • 3-4 cloves garlic, minced Consider sautéing the garlic in olive oil for added flavor.
  • 1/4 cup olive oil
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the bread in half lengthwise. If you prefer smaller servings, cut it into individual pieces.
  3. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Stir well until combined.
  4. Spread the mixture evenly over the cut sides of the bread.
  5. If using, sprinkle grated Parmesan cheese on top.
Baking
  1. Bake in the oven for about 10-12 minutes, until the edges of the bread are golden and toasted.
Serving
  1. Remove from the oven, let cool for a few minutes, slice, and serve warm!

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. To reheat, place individual slices on a baking tray at 350°F for 5-7 minutes or microwave for 15-20 seconds. For freezing, wrap tightly in plastic wrap and foil for up to 1 month.
