Ingredients
  

Main Ingredients
  • 1 block firm or extra-firm tofu, pressed and drained (14 oz) Use firm or extra-firm tofu for best results.
  • 4 slices whole-grain bread or choice of bread Toast for added crunch.
  • 1 cup lettuce, washed and torn Can use any leafy lettuce.
  • 1 large tomato, sliced For added juiciness.
  • ½ cucumber thinly sliced Adds freshness to the sandwich.
  • 4 tablespoons mayo or vegan mayo Spread on the bread for flavor.
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon pepper Adjust to taste.

Method
 

Preparation
  1. Cut the pressed tofu block into ½-inch thick slices.
  2. Sprinkle the sliced tofu with salt and pepper.
Cooking
  1. In a non-stick skillet over medium heat, add a splash of oil and place the tofu slices in the skillet. Cook for about 3-4 minutes per side, or until golden brown and crispy.
  2. Alternatively, bake the tofu at 400°F for 25 minutes, flipping halfway through.
  3. While the tofu cooks, toast the slices of bread until golden and crispy.
Assembly
  1. Spread mayo or vegan mayo on one or both slices of toasted bread.
  2. Layer the cooked tofu on one piece, then add lettuce, tomato, and cucumber.
  3. Top with the second slice of bread and gently press down. Cut in half if desired.

Notes

For perfect crispy tofu, choose firm tofu and press it for at least 15-20 minutes before cooking. Leftovers can be stored separately in the refrigerator for up to three days.
