Ingredients
  

Beans and Base
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups diced tomatoes (canned or fresh)
Seasoning and Cooking Ingredients
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 1 tablespoon olive oil for sautéing

Method
 

Cooking
  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion and bell pepper, stirring often, until they soften (about 5 minutes).
  3. Toss in the minced garlic and sauté for another minute until fragrant.
  4. Pour in the drained beans and diced tomatoes; stir to combine.
  5. Add chili powder, cumin, salt, and pepper. Mix everything well.
  6. Cover the pot and let the chili simmer for about 15 minutes, stirring occasionally.
  7. Taste your chili and adjust the seasoning if necessary.
  8. Ladle into bowls and top with your favorite toppings like sliced avocado or shredded cheese.

Notes

For added creativity, mix different types of beans, add extra veggies, or spice it up with jalapeños. To enhance flavors, let the chili sit for hours or overnight before serving.
