Ingredients
  

  • 2 cups water
  • 1 cup all-purpose flour
  • ½ cup unsalted butter
  • ½ teaspoon salt
  • 4 large eggs
  • 1-8 oz package cream cheese softened
  • 2 cups whipped topping
  • 1 cup caramel sauce
  • 2 cups chopped apples peeled and cored
  • Optional: Additional caramel for drizzling and whipped cream for topping

Method
 

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Eclair Base: In a saucepan, combine water, butter, and salt; bring to a boil. Remove from heat and stir in flour until it forms a ball. Let it cool slightly.
  3. Add the Eggs: Add the eggs one at a time, mixing well after each addition. Your dough should be thick and smooth.
  4. Shape the Eclairs: Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them evenly apart. Bake for 25-30 minutes or until golden and puffed up.

  6. Prepare the Cream Filling: In a bowl, mix softened cream cheese and whipped topping until creamy and smooth.
