Ingredients
  

For the peach filling
  • 4 cups sliced fresh peaches (or canned, drained) Use ripe, in-season peaches for the best flavor.
  • 1 cup granulated sugar Divided into two portions for filling and batter.
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
For the batter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Slice fresh peaches into thin wedges. In a bowl, mix sliced peaches with 1/2 cup of sugar, lemon juice, vanilla extract, and cinnamon. Set aside.
  3. In another bowl, whisk together flour, remaining sugar, baking powder, and salt. Slowly pour in the milk and melted butter. Stir until combined; some lumps are okay.
Baking
  1. In a greased baking dish, pour the batter evenly across the bottom.
  2. Gently spoon the peach mixture over the batter without stirring.
  3. Bake for 40-45 minutes, or until golden brown and bubbly.
  4. Once out of the oven, allow it to cool slightly and serve warm.

Notes

For serving, pair with vanilla ice cream, whipped cream, or caramel sauce. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Thaw in the fridge overnight before reheating.
