  • 2 medium zucchinis, grated
  • 1 teaspoon salt For drawing out moisture from the zucchini
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a colander, sprinkle with salt, and allow it to sit for about 10 minutes to draw out excess moisture.
Mixing
  1. In a mixing bowl, combine the drained grated zucchini, flour, grated Parmesan cheese, egg, green onions, garlic powder, and black pepper. Mix until well incorporated.
Cooking
  1. In a large skillet, heat olive oil over medium heat. You’ll need enough oil to coat the bottom of the pan—about 1/4 inch deep.
  2. Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the skillet, flattening it slightly with a spatula. Fry in batches for about 3-4 minutes per side or until golden brown.
  3. Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil. Repeat the process until all the mixture is cooked.

Notes
