Preparation
- Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a colander, sprinkle with salt, and allow it to sit for about 10 minutes to draw out excess moisture.
Mixing
- In a mixing bowl, combine the drained grated zucchini, flour, grated Parmesan cheese, egg, green onions, garlic powder, and black pepper. Mix until well incorporated.
Cooking
- In a large skillet, heat olive oil over medium heat. You’ll need enough oil to coat the bottom of the pan—about 1/4 inch deep.
- Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the skillet, flattening it slightly with a spatula. Fry in batches for about 3-4 minutes per side or until golden brown.
- Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil. Repeat the process until all the mixture is cooked.

Notes
