  • 1 cup unsalted butter, softened Make sure it’s at room temperature for best results.
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour Can be substituted with a gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Reduce if using salted butter.
  • 1 cup milk Use non-dairy milk for a dairy-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and beat until incorporated.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry mixture to the creamed butter-sugar mixture, alternating with the milk. Start and end with the flour mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for about 10 minutes before removing it to a wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days or freeze for up to 3 months. Warm slices in the microwave for 15-20 seconds if desired.
