  1. In a large pot over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Make sure to break up any large chunks as it cooks.
  2. Add the chopped onion and minced garlic to the pot, sautéing for about 3-5 minutes until the onion is translucent and fragrant.
  3. Stir in the black beans, corn, diced tomatoes, and diced tomatoes with green chiles.
  4. Sprinkle in the taco seasoning, and give everything a good stir.
  5. Add the chicken or vegetable broth, mixing well. Bring the mixture to a boil.
  6. Reduce the heat and let it simmer for about 25 minutes, allowing all those flavors to meld together.
  7. Season with salt and pepper to taste, checking for the right balance of flavors.
  8. Dish out the taco soup into bowls and add your favorite toppings like shredded cheese, sour cream, avocado, and crushed tortilla chips.

Meat Alternatives: Try using ground chicken or a plant-based protein for a vegetarian-friendly option. Fresh cilantro or jalapeños make great finishes to add some brightness!
