Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a lined baking sheet, leaving space between each.
- Using a fork, press down each cookie to create a crisscross design.
Baking
- Bake for 10-12 minutes, or until edges are golden brown. The centers may seem underdone.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
