  • 1 each onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil, for garnish
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a large pot over medium heat, add the ground beef or turkey. Cook until it is browned, approximately 5-7 minutes, breaking it up into bite-sized pieces as it cooks.
  2. Add the chopped onion and minced garlic to the pot. Sauté for another 3-4 minutes, or until the onions are translucent and fragrant.
  3. Pour in the crushed tomatoes, chicken or vegetable broth, and Italian seasoning. Stir to combine everything well.
  4. Bring the soup to a gentle boil and add the broken lasagna noodles. Reduce the heat and let simmer for about 10-12 minutes, or until the noodles are al dente.
  5. Stir in the ricotta cheese and season with salt and pepper. Let it cook for another few minutes until everything is heated through.
  6. Ladle the soup into bowls, sprinkle with shredded mozzarella cheese, and garnish with fresh basil.
