  • 1 pound ground beef (or turkey for a lighter option)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups lasagna noodles, broken
  • 1 tablespoon Italian seasoning

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • to garnish Fresh basil

Method
 

Cooking the Soup
  1. In a large pot over medium heat, add the ground beef (or turkey) to cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, around 3-4 minutes.
  3. Stir in the crushed tomatoes and beef broth, allowing the soup to simmer gently for about 5 minutes.
  4. Add the broken lasagna noodles and Italian seasoning. Season with salt and pepper. Let it boil and then reduce heat to simmer for about 10 minutes until the noodles are cooked al dente.
  5. Stir in the ricotta cheese until well combined and let it cook for an additional 2-3 minutes.
  6. Ladle the soup into bowls and top with shredded mozzarella and grated Parmesan cheese. Garnish with fresh basil before serving. Enjoy!

Notes

Substitutions: You can substitute ground beef with ground chicken or turkey for a lighter meal. Can’t find ricotta cheese? Cream cheese or cottage cheese works well too! Monitor the noodles closely while cooking to ensure they remain al dente, as they will continue to soften while resting in the broth.
